Makes enough for 10 guests
For the Clementine Syrup (produces 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar
Ingredients for the Cocktail (yields 850ml, serving 10)
400ml decent vodka
100ml classic gin
150ml peach liqueur
200ml clementine cordial (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, for finishing
Instructions
Making the Syrup: Combine all the items into a pan, heat until it reaches a gentle boil, agitating to dissolve. After that, remove from the burner and leave to cool down entirely. Transfer to a clean bottle, close it and refrigerate it chilled, where it will keep for about one month.
Preparing the Premix: Pour every spirits and syrup in a sizeable container, allow it to infuse for an hour, then pass it through preferably using muslin, so it's completely strained.
When ready to serve: Pour 85ml from the cocktail base into your stirring glass filled with ice, and agitate gently for one minute to cool it down. Strain to a chilled martini glass or a similar vessel, garnish with a few cranberries and complete it using a quick spritz of the essential oil over the top.
